If you add the juice of half a lemon to a small can of chilled evaporated milk it can be whipped untill stiff.

For a tastier apple pie spoon 1 tablespoonfull of golden syrup or honey over the apples.
Alternatively add 1 0z of sultanas & 1 teaspoonfull of cinnamon.

To help egg whites ‘snow’ for meringues add a pinch of salt.
Adding just under a teaspoonfull of warm water will increase the volume.
½ teaspoonfull of vinegar for every 2 egg whites makes them more marshmallowy.

For a richer pastry use beaten egg mixed with water to bind pastry together. Add a drop of milk to the remains of this to get a gossy glaze.
